This one is for the vegans or even those who want a good power protein meal. This tasty chickpea curry jacket makes for an easy midweek meal that is packed with a lot of flavour and can also be served on a fresh, crisp naan bread or a roll, lightly spread with butter.

Serving suggestion: Cut open roasted sweet potato length ways and put on plates. Spoon over the chickpea curry and squeeze over some lemon juice from lemon wedges. Season, then scatter with coriander before serving.
